On Saturdays, Roseau market goes from Sleepy Hollow to a bustling market in Lagos, Nigeria. Vendors will pressure you to stop at their stall and buy their goods. The beats of drums and laughter fill the air. Yellow, the well-known and harmless market vagrant, will harass you a bit. Your stomach will growl as wisps of local cuisine float by your nose. Follow that smell, and you will arrive at a covered building facing the two entrances to the market. Go through the doors, and you will find Souse & Food Galore.


A row of food warmers, dishes, and two wonderful ladies announce the presence of Souse & Food Galore. You will find local dishes such as blood pudding and fashin (cow skin). If your palette is not that adventurous, there are provisions (steamed ground vegetables), mac and cheese, lentils, and other types of delicious food.


On the Saturday I visited, my palate needed a gentle awakening, so I tried the vegetable pudding instead of the blood pudding. All I can say is that Dominicans know how to season their food!
