Like many other restaurants in Salento,Parrilla y Vinos Juan Estebanserves a local river trout delicacy and different types of meats. Of the two trout restaurants I went to in Salento, Juan Estaban was the best!
The recipe was simple and allowed the fish's settle flavor to shine.
The fish was grilled with a thin layer of oil, salt, and a few spices. The dish was served with a side of the largest patacones, pounded fried green plantains, I had ever seen. The house sangria I had was also memorable.
