Abasto is somewhat of a rebel within Bogota's food culture. The restaurant offers meals that are light and more nutritionally dense. The very delicious traditional Bogotan meals are often high on carbs, hearty, and meat-heavy. Take Ajiaco, for example. This classic dish's foundation consists of three kinds of potatoes, corn, and a South American herb called guasca. People then add chicken, capers, cream, avocado, white rice, and anything else their heart desires. You will not find traditional Ajiaco on the menu at Abasto.
Instead, you will find menu items such as a grilled artichoke appetizer and a grilled trout main dish. On my first visit, I loved my meal so much, I went twice in three days. The seasoning enhanced the meal's authentic flavors, everything tasted incredibly fresh, and the fish was superbly grilled.
The dishes I had looked so colorful and nutritious; I knew I was having a balanced meal.
